Ingredients

1/2 cup unsalted butter, softened,
1/2 cup granulated sugar,
1 cup all-purpose flour,
1/2 cup shredded coconut,

1/2 teaspoon vanilla extract,
1/4 teaspoon salt,
Zest of 1 lemon

Instructions

Directions:
1. Preheat the oven to 350°F (175°C). Grease a baking sheet.
2. In a bowl, cream together softened butter and granulated sugar until smooth.
3. Mix in softened cream cheese, vanilla extract, lemon zest, and lemon curd until well combined.
4. Gradually add in flour, shredded coconut, and salt. Mix until a dough forms.
5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.
6. Bake for 10-12 minutes, or until the edges are lightly golden.
7. Let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
8. Drizzle with additional lemon curd if desired and enjoy!
